Mediterranean Chicken Roulade - Wild mushroom risotto and vegetable ratatouille
Herb Crusted Atlantic Salmon - Roasted red endive, baby carrots and lemon pepper couscous with heirloom tomato sauce
House Smoked Bourbon Glazed Prime Rib - Creamed Horseradish mashed potato, sauteed broccolini and rosemary jus
Salads: choice of Lorenzo (house) or Caesar
Dessert: Key lime pie or Red velvet cake

We are also using online hunting auctions to help promote and fundraise for this years event in addition to the usual silent and raffle! You can see the auction and donations as they grow online HERE!

9am January 11th is applicant judging in the guild booth area (Pro members only). Please read up on memberships list of requirements for each category, remember these are young aspiring members, judge them fairly.
When voting you will be asked to say why yes or no. Give useful feedback, you are a mentor.
What if they are in a different category how could I possibly know!?
You know good work from bad. Be honest, do they have potential?
